Gula melaka is a type of natural and unrefined palm sugar extracted from the sap of flower buds from the coconut palm and caramalised by boiling at low temperatures. There's a hint of mild caramel or dissolved brown sugar in its tasting notes but does not give one the sickening feeling of consuming too much refined sugar. We recommend this as a substitute for maple syrup and butter on pancakes if you want something less sweet but still delicious!
